When you first scrape this dough from the bowl onto the table, you will most likely curse me and think me quite mad, and I wouldn’t necessarily disagree, as for the uninitiated amongst you, things are about to get sticky.
You must trust me and persevere. Embrace what is new.
What is about to happen is the transformation of a blob of thick sticky gloop, changing over the space of a day and a night into something wonderful.
This is the second part of my sourdough tutorial, starting from the initial creation of a honey-based sour starter to today’s loaf making.
