I love ice cream and this sounds delicious! Unfortunately my daughter can't do dairy, do you think milk alternatives would have the same results or do you have any alternatives/recommendations?
I would say go for it. I know in the UK, Elmlea make a very passable plant based cream product.
Soya milk vs oat or nut would greatly work yes. The coconut recipe I’m guessing you could switch the condensed milk easily for a ‘cream’ and add some sugar to taste . Though in my recipe box I have a recipe from Ritz Paris for a coconut ice cream that is non dairy. I’ll dig it out.
