Somehow, after reading your beautiful lines about bread, there´s just one thing that stuck with me: that female cats also pee on everything :))). This solves one or another mistery about some electric appliances in our home, too!
You making bread sounds calm and meditative - mine is a mad rush between so many other jobs!! Lovely to read and I look forward to the recipe. I really would love to have a go at baguettes!
I was going to say I envy someone who can make their own bread, particularly sour dough, but no, it isn’t envy at all, it is a moment of admiration as it isn’t something I would attempt to do, being quite happy to partake of someone else’s hard work. Thank you for another great story Will.
You can’t beat the smell and taste of freshly made bread. I make my own but very basic white or mixed seed. I’ve not managed to keep a starter yet, or even start one. But there’s time.
There is literally nothing better than fresh, homemade bread.
Except your descriptions of it, Will!
I’m trialling bread made at home (not sourdough yet…) and have had great success with homemade crumpets. So much better than those out-of-shape little offerings at the supermarket!
I'm feeling my soul being pulled - much like grissini. Your words coax me toward the kitchen...the flour, yeast, water, and salt. I want to crank up my oven and add more heat to my overheated kitchen this morning. I want my hands to be covered in doughy goo. I want to bite into a thick-crusted loaf of bread... We (my soul and I) thank you for this encouragement...

Moon is particularly nonchalant about what she pees on.
reading this .. was like unexpectantly encountering someone playing the cello and everything else disappears until they finish ..
Thank you for the kind compliment.
These are beautiful loaves
Thank you. I do enjoy the methodical approach to bread making, and the crusts, twists and folding and sealing all appeal to the nerd in me.

With work I assign the time to be able to take the time to make it properly. At home I rarely bake, though I should.

Thank you Sally, I'm happy that you enjoy the words. You should however, never say never, you are only a few hours away from creating a great loaf....
So you’re telling me I can feed some of my current starter with honey?? Gonna have to experiment next time I feed my starter.
I’m not sure of the volume you have, but a small amount in the water every now and then is a nice thing.
Thanks!
I think I shall anticipate that recipe!!
I aim to do this as an extra this week …
Please dont apologise for not writing on here. It must be tiresome at times but when you do it’s worth the wait no matter how long it is !
Thank you. I thoroughly enjoy the time I spend writing here, but as I juggle this with a full week of work, the nights are sometimes not long enough…

There is always time…
I love this post. As I was reading, I could almost smell the bread baking to hear the crusty crunch. Delicious! Must try.
Thank you for your compliment.

This is fantastic. My crumpets have mixed results if I’m honest…
Now that's a mindful moment in the kitchen
Almost like meditation.
Nice...

This is great.
I live in the mountains 🏔️ in Colorado & I haven’t had good bread 🥖 since I visited Jersey in May.
I miss it so much.
Without good bread… all the pizza sucks & bagels 🥯 Etc.
I work at a restaurant & Our bread sucks❗️
Anyway… this piece was satisfying to read through.

Thanks for the bread essay Will, much enjoyed
I feel inspired to make bread now!
