I was born and raised much of my childhood in England, so there is a touch of homesickness that your newsletter comforts as well.

Chiming in late here, on the concept of paywalling and Substack in particular. Will, from the moment I first stumbled across your words (I forget how), I've been impressed by what I found. Later, you were kind enough to gift me a subscription, which blew my mind. Now, when I think back to what I've learned from reading your words, both paid and free editions, I think the quality and quantity of the learning is impressive, and I value your contribution to my culinary development very highly - thank you! (And yes, I value it highly enough to convert to a proper paid subscription when the time comes.)
You were generous with your gifted subscription, but I actually think that you are more generous to all of us with the content that you provide on a regular basis. It's the recipes, the stories, the techniques, the inspiration that I glean from the whole, and above all, the sheer joy of reading your content.
