Can’t beat local honey and that’s as local as you can get

Within two hundred meters of the kitchen.

I had the pleasure of visiting a small honey operation in Abruzzo last year. What a miracle substance. Thanks for sharing and I look forward to your preserved fig recipe.

The flavour is very different to generic honey. I am very lucky to be able to take care of them.

Those preserved figs sound divine!

They really are. Unripe and green from the tree, but turned into something soft and magical with a little careful cookery.

I need to talk to our condominium board about getting a few fig trees on our modest property here in Portland, Maine. Meanwhile your written words console and inspire. Thank you Will.

I’m so happy that you find a connection from my words. To be able to inspire is very humbling.

Your fig tree plan is a very good idea, though in the meantime you should search a wild one out and see if you can take some fruits. My recipe will be released in the coming days.

Will, I just took another look at several of your posts so I could give you more specifics about why I respond to the way you write. First, I should disclose that I love to read and have been reading since age 4. I became 100% deaf, almost overnight at age 39. Much to my happy surprise, that unfortunate event changed how I read. Now I “hear” the author reading aloud to me as I read their words on the page. It’s a slower way to read and much more interesting than rushing through content. I naturally notice the rhythm of the writing - long sentences punctuated by short sentences, or even sentence fragments. Economical writing. All words used are necessary, but no fluff, no b.s. No extra syllables please!

Your writing is warm and conversational. And it’s honest and natural. Many writers seem to be seeking fame and fortunate these days, and that’s fine, but I’m not interested in reading a self-promo piece to help an author build his brand.

Okay, that’s enough from me. Thanks so much for these glimpses of your world.

Your writing passes those tests. It’s natural, inviting, unpretentious, easy to read yet stimulating. I feel like I’m standing next to you looking over your shoulder while you prep, cook and explain. Lucky me. 😊

That's awful pretty, Will. I hope the thymol &c let the second colony recover well.

Yes it’s a small colony but they’re doing much better.

Nothing better than your own honey

You are so very right.

This past summer we discovered Greek honey. It’s a fascinating process. Wondering if colony collapse is a problem for you as it is in the U.S. I’m guessing not if you’re on an organic farm.

I’m so glad you’re taking good care of your bees! And when you make something yourself, it always taste better, what a victory!

I am looking forward to see your recipe, citrus + honey is one of my sweet spots.
