It's simmering away nicely in my old Lodge pan...didn't have a red onion so used a roscoff (i know wasteful). it will be served with a 'You're joking right?' reblochon in a few days.
This is very similar to a bacon jam recipe I used to make at a nose-to-tail butcher I worked at a few years ago. In our recipe it was covered & baked slowly, then the fall-apart bacon chunks were shredded & mixed back in. Crazy yum 🤤
Will, I love this recipe (as I do with all your post), but I was wondering how long this jam keeps for? I'm going to make it this week and was hoping it could keep for at least two weeks? As much as I love jam, I'm not sure I could eat an entire jar in a week! (but we'll see).
You could certainly keep for a week to ten days in the fridge in a jar. You could also half the amount of ingredients and cook it in a smaller saucepan. That would work.
I think 2 of my sons will love this. I will make it for them.
And - I had never heard of Aleppo pepper but have now discovered that I can buy it down the road! Will go this afternoon to purchase that as well as a good hunk of bacon from the butcher.
Who needs turkey? Cheese toast and a shot of whiskey would be the perfect Sunday supper for me.
